In a dry pan, roast the cumin seeds, coriander seeds, fennel seeds, black peppercorns, cloves, green cardamom pods, black cardamom pods, cinnamon sticks, and bay leaves over low heat for 2-3 minutes or until fragrant.
Remove the pan from the heat and let the spices cool down to room temperature.
Transfer the roasted spices to a spice grinder or blender and grind to a fine powder.
Add the red chili powder and turmeric powder to the spice mix and mix well.
Store the spice mix in airtight container until ready to use.
To make the Hyderabadi Chicken Biryani, marinate chicken pieces in yogurt, ginger-garlic paste, and the biryani masala for a few hours. Then, cook the chicken and rice separately and layer them with fried onions, mint leaves, and saffron-infused milk. Serve hot and enjoy!
