Palm Jaggery, which is commonly known as ‘’Panai Karupati’ in Tamil, and ‘gur’ in Hindi is a naturally extracted sweetener from palm trees. Unlike the white sugar, which is chemically treated, Palm Jaggery goes through a natural process of collecting palm juice in mud pots directly from palm trees,boiling it till it reaches the right consistency, and then moulding it to shape in coconut shells. Daygun Palm Jaggery is not extracted from sugarcane, but from the palm trees, mostly found in Tamil Nadu, South India, where these trees grow in rich red soil.
