The date palm tree, Phoenix dactylifera, grows in the Middle East and North Africa primarily for raising its edible fruit, dates. This gum is harvested by tapping the trunk of the date palm tree, where it flows out with the sap at these wounds. The liquid that is extracted is collected, dried, and forms a piece of solid gum. Date palm gum was identified as a mixture of complex polysaccharides with glycoproteins and minerals. This resinous exudate contains a variety of individual sugar molecules, such as arabinose, galactose, and rhamnose, as well as proteins and minerals like calcium and potassium.
