Nori or dried seaweed is an important part of Japanese cuisine. The sheets are made by shredding & rack drying process. It absorbs water from air and is thus hydrous in nature along with protein and carbohydrates. Laden with strong and distinctive flavour, it is used to wrap sushi or onigiri rolls. It also finds usage in garnishing or flavouring the dishes. It is also eaten by making it into a soy sauce-flavoured paste. It is also sometimes used as a form of food decoration.
