Mysore Pak is a legendary Indian sweet that originated in the royal kitchen of the Mysore Palace in Karnataka. Often referred to as the "King of Sweets" in South India, it is a rich, fudge-like confection made from just three primary ingredients : gram flour (besan), clarified butter (ghee), and sugar.
Depending on how it is prepared, Mysore Pak generally falls into two distinct categories :
1. The Traditional (Porous) Style
This version is the original creation. It is characterized by its firm, somewhat crunchy texture and a beautiful honeycomb-like structure.
• Texture : Hard and porous with tiny air pockets throughout.
• Appearance : Usually a deep golden-brown in the centre and slightly lighter on the edges.
• Experience : It crumbles slightly when bitten, releasing a burst of aromatic ghee.
2. The Modern (Soft) Style
Popularized by modern sweet shops, this version is smooth and velvety, often compared to a dense fudge or silk.
• Texture : Soft, moist, and "melt-in-the-mouth."
• Appearance : Uniformly light yellow or golden with a glossy sheen.
• Experience : It requires almost no chewing and is intensely rich due to a higher ratio of ghee and sugar.
